Psi is only a xmpp/jabber client and not a server. And currently psi does
not offer voice or video messages. psi 0.10 the current released version
of psi does offer text based chat and conferencing, file transfer and lots
more. The upcoming 0.11 release of psi will feature much improved text
based conferencing and a list of supported xmpp extension implemented in
psi 0.11 is availible at http://psi-im.org/wiki/Supported_Protocols

servers you might want to evaluate could be ejabberd, wildfire, jabberd1.x,
and there are also some purely commercially licensed servers out there
(listed in http://www.jabber.org/software/servers.shtml )

as you seem to be from a java software development company you might want
to look at Wildfire/Spark. Spark seems to support voice chats.
AFAIK there a not yet any clients that do xmpp standards based video chats.
I think there are some sip based multimedia communications applications that
can use jabber/xmpp for instant messanging and presence, but i don't know
much about sip software.
