Because changing contacts details with-in the same account is easy,
you just tell the server: hey! change this contacts details.

Changing contacts between servers is trickier, because you'd need to
send a new subscription request to the remote user, and they'd seem
you as a separate contact on their list until they meta-contacted your
(assuming their client even supported meta-contacts)
